Filled rolls are practically an institution in Flanders. Yet we get the same questions at the counter every day: what exactly is smos, what is the difference between white and fitness, and what is a true classic? Here are our answers.

What does 'smos' mean?

Smos is the Flemish term for a roll that includes salad garnish alongside the main filling. At our shop, that means: lettuce, carrot, cucumber and egg. You can 'smos' almost any classic or special roll — €1.00 extra for a small roll, €1.30 for a large one.

White or fitness?

White bread is softer and sweeter in taste and remains the most popular choice. Fitness (multigrain) has more bite and fibre, and holds moist fillings like tuna or chicken curry together better. Both are available here in small and large sizes.

The classics everyone knows

These orders cross our counter most often:

  • · Cheese or ham — the eternal staples, especially as a smos
  • · Chicken curry — creamy, sweet-spicy, child-friendly
  • · Martino — filet américain with anchovies, onions, gherkin and spicy sauce
  • · Tuna salad — fresh with a spoonful of mayonnaise
  • · Préparé — raw minced beef with onions and gherkin
  • · Brie with honey and nuts — the sweet classic

Tips for the perfect roll

A good roll stands or falls by its balance: something fatty (cheese, mayonnaise), something fresh (vegetables, gherkin) and something spicy or sweet as an accent. Only have your roll made at the moment of ordering — that makes all the difference compared to a pre-packaged version from the fridge.

What do we drink with it?

In winter, a roll combines excellently with our homemade soup of the day. In summer, most customers choose a soft drink or coffee on the terrace.
